Main Ingredients
- 2 medium zucchinis sliced thin
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 large eggs beaten
- to taste salt and pepper
Preheat air fryer to 400°F (200°C).
In a bowl, mix breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
Dip zucchini slices in beaten eggs, then coat with breadcrumb mixture.
Place coated zucchini slices in a single layer in the air fryer basket.
Air fry for 10-15 minutes, flipping halfway, until golden and crispy.
Season with salt and pepper to taste. Serve immediately.
