Main Ingredients
- 1 lb ground beef
- ½ cup uncooked white rice
- 1 egg
- ¼ cup chopped fresh cilantro
- ¼ cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 4 cups chicken broth
- 1 can diced tomatoes 14.5 oz
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 1 cup chopped zucchini
In a large bowl, mix ground beef, rice, egg, cilantro, onion, garlic, salt, and pepper.
Form mixture into 1-inch meatballs.
In a large pot, bring chicken broth and tomatoes to a boil.
Add meatballs to the pot.
Reduce heat and simmer for 20 minutes.
Add carrots, potatoes, and zucchini.
Continue to simmer for another 20 minutes or until vegetables are tender.
