Ingredients 

Main Ingredients

  • 1 lb ground beef
  • ½ cup uncooked white rice
  • 1 egg
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped zucchini

Instructions 

  1. In a large bowl, mix ground beef, rice, egg, cilantro, onion, garlic, salt, and pepper.
  2. Form mixture into 1-inch meatballs.
  3. In a large pot, bring chicken broth and tomatoes to a boil.
  4. Add meatballs to the pot.
  5. Reduce heat and simmer for 20 minutes.
  6. Add carrots, potatoes, and zucchini.
  7. Continue to simmer for another 20 minutes or until vegetables are tender.
