  • 4 large potatoes baked and diced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 0.5 cup green onions chopped
  • 1 cup cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce them with a fork and bake for 45 minutes or until tender. Let them cool, then dice.
  3. In a large mixing bowl, combine the mayonnaise, sour cream, green onions, cheddar cheese, and bacon.
  4. Add the diced potatoes to the bowl and mix until well combined. Season with salt and black pepper to taste.
  5. Refrigerate for at least 1 hour before serving.
