Basque Codfish Stew Recipe

Main Ingredients
- 500 g Codfish fillets cut into chunks
- 2 Onions finely chopped
- 3 Garlic cloves minced
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 400 g Tomatoes diced
- 2 tablespoon Olive oil
- 1 teaspoon Paprika
- 500 ml Fish stock
- to taste Salt
- to taste Black pepper
Heat the olive oil in a large pot over medium heat.
Add the onions and garlic, and sauté until softened.
Add the bell peppers and cook for another 5 minutes.
Stir in the tomatoes and paprika, and cook for 10 minutes.
Pour in the fish stock and bring to a simmer.
Add the codfish chunks, and simmer for 15-20 minutes until the fish is cooked through.
Season with salt and black pepper to taste.
Serve hot with crusty bread.
