Ingredients

  • 4 medium beets trimmed and scrubbed
  • 2 cups mixed greens
  • ½ cup goat cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast for 30 minutes or until tender. Let cool, then peel and slice.
  3. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  4. In a large bowl, combine mixed greens, sliced beets, goat cheese, and walnuts. Drizzle with dressing and toss gently to combine.
  5. Serve immediately.
