Main Ingredients
- 4 medium beets trimmed and scrubbed
- 2 cups mixed greens
- ½ cup goat cheese crumbled
- ¼ cup walnuts toasted
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast for 30 minutes or until tender. Let cool, then peel and slice.
In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
In a large bowl, combine mixed greens, sliced beets, goat cheese, and walnuts. Drizzle with dressing and toss gently to combine.
Serve immediately.
