  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until softened.
  2. 2. Add the butternut squash and vegetable broth. Bring to a boil, then simmer until the squash is tender, about 20-25 minutes.
