Main Ingredients
- 1 large Butternut Squash peeled, seeded, and cubed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- to taste Salt
- to taste Black Pepper
1. In a large pot, sauté the onion and garlic until softened.
2. Add the butternut squash and vegetable broth. Bring to a boil, then simmer until the squash is tender, about 20-25 minutes.
3. Use a blender to puree the soup until smooth.
4. Stir in the coconut milk and season with salt and pepper to taste.
