Ingredients 

Main Ingredients

  • 1 lb Chicken thighs cut into bite-sized pieces
  • 1 lb Andouille sausage sliced
  • ½ cup Vegetable oil
  • ½ cup All-purpose flour
  • 1 Onion chopped
  • 1 Bell pepper chopped
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced
  • 6 cups Chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 1 cup Okra sliced
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Whisk in the flour to make a roux. Cook, stirring constantly, until the roux is a dark brown color.
  2. 2. Add the onion, bell pepper, and celery. Cook until the vegetables are tender.
  3. 3. Stir in the garlic and cook for another minute.
  4. 4. Gradually whisk in the chicken broth. Bring to a boil.
  5. 5. Add the chicken, sausage, Cajun seasoning, thyme, and bay leaves. Reduce heat and simmer for 45 minutes.
  6. 6. Add the okra and cook for another 15 minutes. Season with salt and pepper to taste.
  7. 7. Serve hot over rice.
