Ingredients

  • 1 unit Red Bell Pepper sliced into rings
  • 1 unit Zucchini sliced into strips
  • 1 unit Red Onion sliced into rings
  • 4 units Whole Wheat Sandwich Rolls split
  • 4 ounces Goat Cheese crumbled
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Brush the sliced vegetables with olive oil and season with salt and pepper.
  3. Grill the vegetables for about 3-4 minutes on each side, until they are tender and have grill marks.
  4. Toast the sandwich rolls on the grill for about 1-2 minutes, until they are lightly browned.
  5. Assemble the sandwiches by layering the grilled vegetables and crumbled goat cheese on the toasted rolls.
  6. Serve immediately and enjoy!
