California Grilled Veggie Sandwich

Main Ingredients
- 1 unit Red Bell Pepper sliced into rings
- 1 unit Zucchini sliced into strips
- 1 unit Red Onion sliced into rings
- 4 units Whole Wheat Sandwich Rolls split
- 4 ounces Goat Cheese crumbled
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat your grill to medium-high heat.
Brush the sliced vegetables with olive oil and season with salt and pepper.
Grill the vegetables for about 3-4 minutes on each side, until they are tender and have grill marks.
Toast the sandwich rolls on the grill for about 1-2 minutes, until they are lightly browned.
Assemble the sandwiches by layering the grilled vegetables and crumbled goat cheese on the toasted rolls.
