Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 lb chicken breast, diced
  • 3 cups chicken broth
  • 2 cups corn kernels
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon chopped fresh parsley

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the corn kernels and reduce the heat to a simmer. Cook for 10 minutes.
  7. Stir in the heavy cream, salt, and black pepper. Cook for another 5 minutes.
  8. Garnish with chopped fresh parsley before serving.
