Chicken and Gnocchi Soup

- 1 lb Chicken breast, diced
- 1 package Gnocchi
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 3 cloves Garlic, minced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Dried thyme
- 2 cups Spinach, fresh
1. In a large pot, heat some oil over medium heat. Add diced chicken and cook until browned.
2. Add carrots, celery, onion, and garlic. Cook until vegetables are tender.
3. Pour in chicken broth and bring to a boil. Add gnocchi and cook until they float to the top.
4. Stir in heavy cream, salt, pepper, and thyme. Simmer for a few minutes.
5. Add spinach and cook until wilted. Serve hot.
