Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 8 cups Chicken Broth
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 1 Onion diced
  • 3 cloves Garlic minced
  • 2 cups Egg Noodles
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the chicken breasts to the pot. Reduce heat and let simmer until the chicken is cooked through, about 15-20 minutes.
  5. 5. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  6. 6. Add the egg noodles, salt, pepper, thyme, and parsley. Cook until the noodles are tender, about 10 minutes.
  7. 7. Taste and adjust seasoning if needed. Serve hot.
