Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, diced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 6 cups Chicken Broth
  • 2 cups Cooked Chicken, shredded
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 can Black Beans, drained and rinsed 15 oz can
  • 1 cup Corn Kernels
  • 1 Lime, juiced
  • to taste Salt and Pepper
  • 1 handful Cilantro, chopped for garnish
  • 1 cup Tortilla Strips for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.
  2. Add cumin and chili powder. Stir to combine.
  3. Pour in chicken broth, diced tomatoes, black beans, corn, and shredded chicken. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add lime juice, salt, and pepper to taste. Simmer for another 5 minutes.
  5. Serve hot, garnished with cilantro and tortilla strips.
