Ingredients

  • 500 g Green beans trimmed
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions 

  1. 1. Bring a pot of salted water to a boil.
  2. 2. Add green beans and cook for 3-5 minutes until tender-crisp.
  3. 3. Drain and transfer to a bowl of ice water to cool.
  4. 4. In a large bowl, combine green beans, cherry tomatoes, and red onion.
  5. 5. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
  6. 6. Pour dressing over the salad and toss to coat.
  7. 7. Serve chilled.
