Cold Green Bean Salad Recipe

- 500 g Green beans trimmed
- 1 cup Cherry tomatoes halved
- 0.25 cup Red onion thinly sliced
- 2 tablespoon Olive oil
- 1 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- to taste Salt and pepper
1. Bring a pot of salted water to a boil.
2. Add green beans and cook for 3-5 minutes until tender-crisp.
3. Drain and transfer to a bowl of ice water to cool.
4. In a large bowl, combine green beans, cherry tomatoes, and red onion.
5. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
6. Pour dressing over the salad and toss to coat.
7. Serve chilled.
