Ingredients 

Main Ingredients

  • 4 cups corn kernels fresh or frozen
  • 2 cups diced potatoes
  • 1 cup diced onion
  • 1 cup diced celery
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoon butter
  • 2 tablespoon all-purpose flour
  • 1 teaspoon smoked paprika
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions 

  1. In a large pot, melt butter over medium heat. Add onion, celery, and garlic. Cook until softened.
  2. Stir in flour and cook for 1 minute.
  3. Gradually add vegetable broth, stirring constantly.
  4. Add potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Add corn, cream, smoked paprika, salt, and pepper. Simmer for another 10 minutes.
  6. Serve hot.
