Main Ingredients
- 4 cups corn kernels fresh or frozen
- 2 cups diced potatoes
- 1 cup diced onion
- 1 cup diced celery
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoon butter
- 2 tablespoon all-purpose flour
- 1 teaspoon smoked paprika
- 2 cloves garlic minced
- Salt and pepper to taste
In a large pot, melt butter over medium heat. Add onion, celery, and garlic. Cook until softened.
Stir in flour and cook for 1 minute.
Gradually add vegetable broth, stirring constantly.
Add potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
Add corn, cream, smoked paprika, salt, and pepper. Simmer for another 10 minutes.
Serve hot.
