Instructions
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the sliced mushrooms and cook until they release their moisture and become tender.
4. Stir in the flour and cook for another minute.
5. Gradually add the chicken broth, stirring constantly. Bring to a boil, then reduce heat and simmer for 10 minutes.
6. Use a blender to puree the soup until smooth.
7. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Heat through, but do not boil.
