Ingredients

  • 8 Corn tortillas
  • 2 cups Cooked chicken, shredded
  • 2 cups Enchilada sauce
  • 1 cup Shredded cheese
  • ½ cup Chopped onions
  • ¼ cup Chopped cilantro

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, 1 cup of enchilada sauce, chopped onions, and cilantro.
  3. Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  6. Sprinkle shredded cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Serve hot, garnished with extra cilantro if desired.
