Freeze and Reheat Breakfast Burritos

- 4 large flour tortillas
- 6 eggs beaten
- 1 cup shredded cheese
- 1 cup cooked sausage crumbled
- 1 cup diced potatoes cooked
- 1 tablespoon butter
1. In a skillet, melt the butter over medium heat. Add the beaten eggs and cook until scrambled.
2. Lay out the tortillas and evenly distribute the scrambled eggs, cooked sausage, diced potatoes, and shredded cheese among them.
3. Roll up each tortilla tightly to form burritos. Wrap each burrito in aluminum foil.
4. Place the wrapped burritos in a freezer bag and store in the freezer.
5. To reheat, remove the foil and microwave the burrito for 2-3 minutes or until heated through.
