Ingredients 

Salad Ingredients

  • 2 cups Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • ½ cup Red Onion thinly sliced
  • ½ cup Kalamata Olives pitted
  • ½ cup Feta Cheese crumbled

Chicken Marinade

  • 2 pieces Chicken Breasts boneless, skinless
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Oregano dried
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. 1. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. 2. Preheat grill pan over medium-high heat. Grill chicken for 5-7 minutes on each side or until fully cooked. Let it rest before slicing.
  3. 3. In a large mixing bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  4. 4. Add sliced grilled chicken to the salad. Toss everything together and serve immediately.
