Ingredients

  • 1 cup rice
  • 6 cups chicken broth
  • 3 cups cooked chicken, shredded
  • 3 eggs
  • 2 lemons, juiced
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, bring the chicken broth to a boil.
  2. 2. Add the rice and reduce the heat to a simmer. Cook until the rice is tender, about 20 minutes.
  3. 3. In a separate bowl, whisk the eggs and lemon juice together.
  4. 4. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
  5. 5. Gradually add the egg mixture back into the pot, stirring constantly.
  6. 6. Add the shredded chicken and cook until heated through. Season with salt and pepper to taste.
  7. 7. Serve hot and enjoy!
