Ingredients 

Main Ingredients

  • 1 cup uncooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup kalamata olives, pitted and sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Cook the rice according to package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine the cooked rice, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the rice mixture.
  4. 4. Toss everything together until well combined. Season with salt and pepper to taste.
  5. 5. Serve immediately or refrigerate for later.
