Main Ingredients
- 1 lb chicken breast diced
- 1 lb andouille sausage sliced
- 1 cup onion chopped
- 1 cup green bell pepper chopped
- 1 cup celery chopped
- 3 cloves garlic minced
- 1 can diced tomatoes with juice
- 1.5 cups long grain rice
- 3 cups chicken broth
- 2 teaspoon Cajun seasoning
- 1 teaspoon dried thyme
- 2 pcs bay leaves
- 1 lb shrimp peeled and deveined
- Salt and pepper to taste
1. In a large pot, cook the chicken and sausage over medium heat until browned. Remove and set aside.
2. In the same pot, sauté the onion, bell pepper, celery, and garlic until tender.
3. Stir in the tomatoes, rice, chicken broth, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
4. Reduce heat, cover, and simmer for 20-25 minutes, until rice is tender.
5. Add the shrimp, chicken, and sausage. Cook until shrimp is pink, about 5 minutes. Season with salt and pepper to taste.
