Leftover Chicken Croquettes Recipe
A great way to use up leftover chicken, these croquettes are crispy on the outside and tender on the inside.

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- 1 Egg beaten
- ½ cup Breadcrumbs
- ¼ cup Chopped parsley
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ½ cup Flour for coating
- ¼ cup Vegetable oil for frying
In a mixing bowl, combine the shredded chicken, mashed potatoes, beaten egg, breadcrumbs, chopped parsley, salt, and black pepper. Mix well.
Shape the mixture into small patties and coat each one lightly with flour.
Heat the vegetable oil in a frying pan over medium heat.
Fry the croquettes in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
Drain on paper towels and serve hot.
