Leftover Mashed Potato Pancakes
These potato pancakes are a great way to use up leftover mashed potatoes. Crispy on the outside and soft on the inside, they're perfect for breakfast or as a side dish.

- 2 cups leftover mashed potatoes
- 1 cup shredded cheese cheddar or your choice
- 1 egg beaten
- ¼ cup flour
- ¼ cup chopped green onions
- to taste salt and pepper
- 2 tablespoon vegetable oil for frying
1. In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, and chopped green onions. Mix well.
2. Season with salt and pepper to taste.
3. Heat vegetable oil in a frying pan over medium heat.
4. Scoop about ¼ cup of the potato mixture and form it into a patty. Place it in the hot pan.
5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
6. Repeat with the remaining potato mixture.
7. Serve hot, and enjoy!
