Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese cheddar or your choice
  • 1 egg beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • to taste salt and pepper
  • 2 tablespoon vegetable oil for frying

Instructions 

  1. 1. In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, and chopped green onions. Mix well.
  2. 2. Season with salt and pepper to taste.
  3. 3. Heat vegetable oil in a frying pan over medium heat.
  4. 4. Scoop about ¼ cup of the potato mixture and form it into a patty. Place it in the hot pan.
  5. 5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. 6. Repeat with the remaining potato mixture.
  7. 7. Serve hot, and enjoy!
