Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olives sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Rinse the lentils under cold water.
  2. 2. In a saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
  3. 3. In a large mixing bowl, combine cooked lentils, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the fridge for later.
