Ingredients 

Main Ingredients

  • 200 g Pasta any type
  • 200 g Salmon fillet skinless
  • 1 Cucumber diced
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • ¼ cup Olives sliced
  • ¼ cup Feta cheese crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and set aside.
  2. 2. While the pasta is cooking, heat a pan over medium heat and cook the salmon fillet for about 4-5 minutes on each side, or until fully cooked. Let it cool slightly, then flake it into pieces.
  3. 3. In a large mixing bowl, combine the cooked pasta, flaked salmon, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper. Pour the dressing over the pasta salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later. Enjoy!
