Mediterranean Vegetable Stew
A hearty and healthy vegetable stew with Mediterranean flavors.

- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 eggplant, chopped
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add zucchini, eggplant, and red bell pepper. Cook for 5-7 minutes.
Stir in diced tomatoes, vegetable broth, oregano, and basil.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
