- 4 large potatoes peeled and grated
- 1 medium onion grated
- 2 large eggs beaten
- 0.5 cup flour
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup vegetable oil for frying
1. Grate the potatoes and onion. Place in a clean kitchen towel and squeeze out the excess moisture.
2. In a mixing bowl, combine the grated potatoes, grated onion, beaten eggs, flour, salt, and pepper. Mix well.
3. Heat the vegetable oil in a frying pan over medium-high heat.
4. Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with a spatula. Fry until golden brown and crispy, about 3-4 minutes per side.
5. Remove the latkes from the pan and drain on paper towels. Serve hot.
