- 2 cups mashed potatoes leftover or freshly made
- 1 cup all-purpose flour
- 2 tablespoon butter melted
- 1 teaspoon salt
In a mixing bowl, combine mashed potatoes, flour, melted butter, and salt. Mix until a dough forms.
Turn the dough out onto a floured surface and roll it out to about ½ inch thick.
Cut into triangles or use a round cutter to make scone shapes.
Heat a frying pan over medium heat and cook the scones for about 3-4 minutes on each side, until golden brown.
