Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • to taste Salt and pepper
  • 2 tablespoon Butter

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until translucent.
  3. 3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the heavy cream. Season with salt and pepper to taste. Heat through, but do not boil.
  6. 6. Serve hot, garnished with your favorite toppings.
