Slow Cooker Mediterranean Stew

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups diced tomatoes
- 1 cup chickpeas, drained and rinsed
- 1 cup kalamata olives, pitted and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups vegetable broth
- 2 cups baby spinach
1. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
2. Transfer onion and garlic to slow cooker. Add tomatoes, chickpeas, olives, oregano, basil, salt, pepper, and vegetable broth.
3. Cover and cook on low for 8 hours.
4. Stir in baby spinach just before serving.
