Traditional Mexican Molletes
Molletes are a traditional Mexican open-faced sandwich, typically served for breakfast or brunch. They are made with bolillo rolls, refried beans, cheese, and a variety of toppings.

Main Ingredients
- 4 pieces Bolillo rolls sliced in half
- 2 cups Refried beans
- 2 cups Shredded cheese preferably Oaxaca or Monterey Jack
- 1 cup Pico de gallo for topping
- 1 cup Sour cream for topping
- 1 cup Guacamole for topping
1. Preheat your oven to 350°F (175°C).
2. Spread a generous layer of refried beans on each half of the bolillo rolls.
3. Top the beans with shredded cheese.
4. Place the rolls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
5. Remove from the oven and top with pico de gallo, sour cream, and guacamole.
6. Serve immediately and enjoy!
