Ukrainian Red Borscht Soup Recipe
A traditional Ukrainian beet soup, hearty and flavorful.

Main Ingredients
- 2 medium beets peeled and grated
- 1 medium carrot peeled and grated
- 1 medium onion chopped
- 3 cups cabbage shredded
- 3 medium potatoes peeled and diced
- 6 cups beef broth
- 2 tablespoon tomato paste
- 2 cloves garlic minced
- to taste salt
- to taste pepper
- 1 tablespoon vinegar
- to serve sour cream
- to serve fresh dill chopped
1. In a large pot, bring the beef broth to a boil.
2. Add the grated beets, carrots, and chopped onion. Cook for 10 minutes.
3. Add the diced potatoes and shredded cabbage. Cook for another 20 minutes.
4. Stir in the tomato paste, minced garlic, salt, pepper, and vinegar. Simmer for 30 minutes.
5. Serve hot with a dollop of sour cream and a sprinkle of fresh dill.
