Main Ingredients
- 200 g Pasta any shape
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red onion finely chopped
- ¼ cup Olives sliced
- ¼ cup Fresh basil chopped
Dressing
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- to taste Salt and pepper
1. Cook the pasta according to package instructions. Drain and rinse under cold water.
2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and basil.
3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, salt, and pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Serve immediately or refrigerate for later.
