Main Ingredients
- 200 g vermicelli noodles
- 200 g shredded chicken
- 1 cup shredded carrots
- 1 cup sliced cucumber
- ¼ cup chopped peanuts
- ¼ cup fresh mint leaves
- ¼ cup fresh cilantro
- ¼ cup fresh basil
Dressing
- ¼ cup fish sauce
- ¼ cup lime juice
- 2 tablespoon sugar
- 1 clove garlic, minced
- 1 tablespoon water
- 1 teaspoon chili garlic sauce
1. Cook the vermicelli noodles according to the package instructions. Drain and set aside.
2. In a mixing bowl, combine the shredded chicken, carrots, cucumber, peanuts, mint, cilantro, and basil.
3. In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, water, and chili garlic sauce to make the dressing.
4. Toss the cooked noodles with the chicken and vegetable mixture. Pour the dressing over the top and toss to combine.
5. Serve immediately, garnished with extra herbs and chopped peanuts if desired.
