  • 1 cup Flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 large Egg
  • ½ cup Milk
  • 2 tablespoon Olive oil

Instructions 

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, flour, baking powder, and salt.
  3. In another bowl, whisk together egg, milk, and olive oil.
  4. Combine wet and dry ingredients, and mix until just combined.
  5. Heat a frying pan over medium heat and lightly grease with oil.
  6. Spoon batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
