Main Ingredients
- 4 lbs beef bones preferably with marrow
- 2 large carrots chopped
- 2 stalks celery chopped
- 1 large onion quartered
- 4 cloves garlic smashed
- 2 tablespoon apple cider vinegar
- 2 teaspoon salt to taste
- 1 teaspoon peppercorns
- 16 cups water
1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes.
2. Transfer the roasted bones to a large stockpot. Add the carrots, celery, onion, garlic, apple cider vinegar, salt, peppercorns, and water.
3. Bring to a boil, then reduce to a simmer. Let it simmer for at least 8 hours, skimming off any foam that forms on the surface.
4. Strain the broth through a fine-mesh strainer and discard the solids. Let it cool, then refrigerate.
