Ingredients 

Main Ingredients

  • 4 cups potatoes, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup kalamata olives, pitted and sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, cherry tomatoes, kalamata olives, red onion, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the potato mixture and toss to coat.
  4. 4. Season with salt and pepper to taste. Serve chilled or at room temperature.
