  • 1 tablespoon Olive oil
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onions and garlic. Sauté until soft.
  3. Add spinach and cook until wilted.
  4. Pour in vegetable broth, bring to a boil, then simmer for 10 minutes.
  5. Blend the soup until smooth. Season with salt and pepper.
